Kathleen Poole, Ph.D. RD, Dr. Poole has taught in higher education for 22 years and is currently a Professor and Registered Dietitian at Radford University in the Department of Health and Human Performance.
Some of the courses she has taught include epidemiology; global health; exercise, performance, and nutrition; community and cultural nutrition; therapeutic and prevention concepts of exercise; and health communication and coaching. Prior to becoming a professor, Dr. Poole had over 10 years of professional experience in public health and worksite health promotion. She and her colleagues worked with NFL officials to enhance their health and officiating performance for 16 years.
Dr. Poole also conducted body composition assessments for football officials in several collegiate conferences including the ACC, Conference USA, Mountain West Conference, Southland Conference, and the Big 10 Conference over a 10-year period. She is proficient at body composition testing using the BOD POD, In Body, and skinfold calipers. Dr. Poole served as an assistant coach for Blacksburg High School Cross Country, Indoor, and Outdoor Track Teams for seven years.
She has provided sports nutrition consultations with college and high school athletes to improve their athletic performance. In her spare time, Dr. Poole enjoys running and has completed 19 marathons and one Ironman triathlon.
